Mediterranean Pizza ("The Uncle Bobby")
Ingredients
- 3/4 lb pizza dough
- 1 28 oz. can of San Marzano Tomatoes
- 1/2 tbsp Kosher Salt per 28 ounce can of tomatoes
- Sliced Mozzarella (thick sliced from the deli)
- Grated Romano cheese
- 1/4 cup grilled marinated artichoke hearts (small jar)
- 1/4 cup small container calamata olives pitted and halved
- 1/4 cup sun dried tomatoes thinly sliced
- 2 slices fresh parma procuitto
- 3 lemon and olive oil grilled chicken tenders
- 1/8 cup thin sliced red onions.
Uncle Bobby wasn’t picky so don’t be afraid to improvise. Like Uncle Bobby, this pizza can roll with the punches.
Directions
Marinate chicken tenders or breast sliced 1/4 inch thick strips in 1tbsp olive oil minced garlic and 1/2 tsp fresh lemon juice for 30 mins then grill. let cool and slice for topping pizza.
Insert pizza dome and cooking platform in the oven and preheat oven at 500 degrees 30 minutes prior to baking the pizza.
Combine tomatoes and salt in mixing bowl and crush the tomatoes.
Place 14 inch round parchment paper on pizza peel.
Stretch the dough and place on parchment paper.
Spread the tomato sauce evenly over the dough with the back of a metal ladle.
Add slices of mozzarella cheese leaving some of the crust exposed.
Evenly spread toppings.
Insert into preheated oven. Average cook time 8 mins with pizza dome
